Caribbean Black Bean Soup is so easy to make. My kids tease me that this if the only bean dish I don’t turn into veggie burgers….but those are also a great option if you have leftover Caribbean Black Beans. Turning them into awesome soup is as simple as whirling up the leftovers with some Vegetable Broth and topping with toasted coconut, hot peppers, cilantro and a squeeze of lime. If you need to make it really fast, just used canned black beans and it is still really good. My kids love the Caribbean flavor of this soup. It is really filling and loaded with protein and fiber. You can serve it up with Oven Roasted Sweet Potatoes splashed with Orange Juice and Olive Oil and sprinkled with Coconut if you like it. Some shredded slaw with a little Oil and Vinegar dressing make a fast healthy weeknight meal.
