Make this Vegan by omitting the meat. Serve with corn chips or over rice
Ingredients
- 1 Onion, chopped
- 1 Bell Pepper, chopped or frozen
- 2 Tablespoons Chili Powder
- 1 Tablespoon Mexican Seasoning
- 2 Tablespoons Balsamic Vinegar
- Ground Beef, Chicken or Turkey (optional)
- 2 Cans Tomatoes, whole or chopped
- 2 Cans Tomato Sauce
- 3 Cans Any Beans, rinsed and drained (Kidney, Pinto, Black)
- 1 Cup Frozen or Canned Corn, optional
- 1 Can Green Chilies
TOPPINGS:
- Sour Cream
- Jalapenos
- Grated Cheese
- Salsa
- Avocados
Instructions
- Saute the Onions and Peppers in a bit of Olive Oil on the Saute setting until just soft
- Add Meat if using and let brown for a few minutes
- Add all the remaining ingredients
- Switch to Manual setting shut steam valve and set timer for 6 minute
- Let pressure come down naturally until the steam button drops
- Serve topped with optional toppings
