This tasty little Greek Felafel version came from Abel & Cole. I love their recipes. They are fresh, inventive and lots of Vegetarian options. I have made these wheat free with the addition of Oats and streamlined the recipe a bit so they are fast and easy to pull together. You can use grated Feta or substitute more traditional mashed Chick Peas for the Halloumi.
Lemon Spiked Tomato Dip
A Mediterranean spice sauce for felafel. This recipe is very versatile. You can use any type of tomato products you have on hand. Fresh, jarred, over ripe, virtually anything works here.
Ingredients
- 2 tetra packs Chopped Tomatoes
- 1 small jar Tomato Puree
- 1 Lemon, Juice and Zest
- 1 Onion, chopped
- 1 tsp Greek Seasoning
- Ground Pepper to taste
- 1/8 cup Olive Oil
- 1 small handful of chopped, mint or parsley
- 1 Tbsp Honey
Instructions
- Puree everything in the food processor and then simmer for about 30 min to meld flavors. Serve with Greek Felafel or use as a dip for bread.
