Pasta Primavera literally screams Spring from the plate. But heavy creamy white sauce literally screams heart attack on my plate. I have lightened this Healthy Pasta Primavera version up with lots of green veggies, fresh herbs, white wine and just a sprinkle of tangy parmesan. You can make this with a healthy grain in lieu of the noodles. Pasta isn’t really on my health list but I use good quality organic pasta once in awhile. I love the toothy bite of it and I use just a bit, letting the vegetables be the main attraction of the dish. You can use just vegetables and add a bit of grilled chicken or chicken or veggie sausage or try a hearty grain instead of the pasta. Farro, Wheat Berries, Buckwheat or other hefty grain would be great in this.
Healthy Pasta Primavera

Yield 4 servings
Use a grain in place of the pasta. Try adding grilled chicken or veggie or chicken sausage. Change up the veggies to incorporate lots of greens and colors.
Ingredients
- 1 package Spaghetti or other Pasta cooked al dente and drained (run cool water over it)
- 6 cups Green Veggies, diced
- Asparagus
- Broccoli
- Green Beans
- Zucchini
- 1-2 cups Mushrooms, sliced (optional)
- 3 handfuls Baby Spinach, rinsed
- 6 cloves Garlic, minced
- 6-8 Cherry Tomatoes, halved
- handful Basil, sliced into ribbons
- small handful Italian Parsley, chopped rough
- 2 tablespoons Powdered Veggie Broth
- 1-2 cups Dry White Wine
- Parmesan Cheese
- Ground Pepper
- Dried Hot Peppers (optional)
Instructions
- Heat a splash of Olive Oil in a large shallow pan or wok
- Toss in the Green Veggies, and Mushrooms (if using) stir fry over high heat 2 minutes, turn the heat down and cover for another 2 minutes until tender but still a bit crisp
- Add the Garlic and sprinkle the Veggie Powder over all the Veggies
- Add the Wine, and stir well
- Toss in the Pasta or Grain and add more Wine if needed
- Heat through, stir and and add the Tomatoes and Spinach, letting wilt for just a minute
- Just before serving sprinkle in the Herbs and toss with a grind of Parmesan, Ground Pepper a splash of Olive Oil and Hot peppers if you like.
