This is such a fast and easy way to make Kale. If you buy the Organic chopped Kale in a bag, you don’t even have to mess with taking the ribs out. Just tear open the bag, fill it with water for a quick rinse and toss it into the pan for a fast steam. Tender Caramelized Onions add a sweetness and pops of Garlic add lots of flavor. Kale with Caramelized Onions cooked up fast for a healthy side dish. Try it with Jerk Chicken and or Caribbean Black Beans. Even my kids like this version of Kale. You can use Collard Greens, Chard or Winter Greens as well.
Kale with Caramelized Onions

Use any kind of Greens for this quick cook side dish
Ingredients
- 1 bag Kale or one big bunch, ribs removed and leaves chopped rough
- 1 large Yellow Onion, halved and Sliced
- 3 Cloves Garlic, chopped rough
- Pinch of Sugar
- Sea Salt and Ground Pepper
Instructions
- Heat a small glug of Olive Oil or a tablespoon of Coconut Oil in a large shallow pan with a lid
- Toss in the Onions and cook over high heat about 3 minutes until just starting to brown
- Turn the heat down, sprinkle with a few grinds of Sea Salt and a pinch of Sugar
- Let cook about 10 minutes over low heat stirring occasionally
- Add the Garlic and turn the heat back up
- Toss in the rinsed Kale (with water clinging to the leaves)
- Give it a quick stir and cover, letting it steam for a few minutes
- Test a leaf, it should be tender to the bite and bright green (cooking time will depend on the freshness of the leaves)
- Turn the heat back up, stir everything around and give it a grind of Pepper before serving
