During my college years, I was a bartender in an old english pub. My first introduction to Pimm’s was this amazing concoction of Pimms and Lemonade a spritz of Soda and a beautiful garnish of fresh, crisp cucumbers, lemons and mint all served up in an big pewter goblet. I got hooked on those drinks for the years I was in college and since moving to the UK I have reestablished my love affair with the classic Pimms Cup. However, the weird thing here of calling diet lemon/lime fizzy drink with artificial sweetener lemonade has me completely perplexed. A lot of places here serve Pimms ready made with this nastiness. The first taste leave a metallic reside from the artificial sweetener…..then comes the headache….and it is not from too much Pimms. I make my own and carry it around in a water bottle. Sad, but true. I love my Pimms too much to ruin it with fake sweetener. Here is the simple, healthy (sort of) natural version of the Classic Pimm’s Cup.
- 1 SHOT PIMMS
- 1/2 cup LEMON/LIME JUICY WATER (or fresh lemon/lime juice and a shot of simple syrup)
- 1/2 cup SPARKLING WATER
- 2 LEMON WEDGES
- 4 FROZEN BLUBERRIES
- 4 FROZEN BLACKBERRIES OR RASPBERRIES
- 4 SPRIGS FRESH MINT
- 1 CUCUMBER SPEAR
Fill a glass with Ice, add the Pimms, Juice and Garnishes. Top with Sparkling Water.
