Sri Lanken Chicken Curry
Ingredients
- 1 large Onion, diced
- 4 cloves Garlic, chopped
- 2 inch piece of Ginger, peeled and grated
- 8 bone-in skinless, Chicken Thighs
- 1 tsp Fenugreek
- 3 stalks fresh Curry Leaves
- 1 Cinnamon Stick
- 1 tsp Turmeric
- 1 tsp Cardamom
- 1 tsp ground Cloves
- 4-6 heaping tsp ROASTED Sri Lanken Curry Powder
- 1 tsp Chili Powder
- Juice of 1 Lemon
- 2-4 Tbsp Tomato Puree
- Sea Salt
- Chicken Broth and/or Coconut milk
Instructions
Saute Onion, Garlic, Ginger, Fenugreek, Curry Leaves and Cinnamon stick.
Add Meat and remaining ingredients except broth/coconut milk and lemon juice
Simmer 30-40 minutes adding broth and/or coconut milk to taste and desired thickness of the gravy
Add salt as needed and lemon juice before serving
