Power Bowls are my current go to meal option as of late and this Thai Inspired Power Bowl is one of my favorites. I am obsessed with the power bowls coming out of The Wild Root Cafe. They are creative, seasonal and always delicious. If I ever open a restaurant, despite the fact of becoming a single parent as my husband would leave me, I would model it after the Wild Root. The menu has some staples on it but the ingredients change with what is in season, fresh and available. This allows for amazing creativity from the chefs and delicious food combinations. I have been copying this at home as it isn’t feasible to eat all my meals at Wild Root. If you take a bit of time early in the week and cook up some veggies and grains and chop some fresh herbs these bowls come together super fast and the everyone can make their own version. Start with some grains like Farro, Quinoa or Brown Rice. Steam some Edamame, Sweet Potatoes, Broccoli, Green Beans, Apsaragus or Beets. Toss in fresh Veggies like shredded Carrots, slivered Red Peppers, Cucumbers or Daikon Radish and a handful of Greens like Arugula or Baby Lettuce. Drizzle with an easy, peasy Dressing, sprinkle with some Seeds and you have your Seasonal Power Bowl.
Thai Inspired Power Bowls
Mix and Match Veggies and Grains, then toss with an easy, Thai dressing.
Ingredients
- Farro, Quinoa or Brown Rice, Cooked & Cooled
- Carrots, Shredded
- Red Peppers, Julienned
- Edamame
- Cabbage, Shredded
- Green Onions, Sliced
- Green Beans or Broccoli, steamed and stir-fried with a bit of Soy Sauce
- Cilantro, Thai Basil, Mint Chopped
- Arugula or Baby Lettuce
- Jalapeños, Sliced
- Fresh or Frozen Lime Leaves, Fried in a bit of Coconut Oil (optional)
- Trader Joe's Thai Lime & Chili Cashews
THAI DRESSING (enough for two servings)
- 3 Tbsp Rice Wine Vinegar
- 2 Tbsp Avocado Oil
- 1/2 tsp Sesame Oil
- 2 tsp Mirin
- 3 tsp Sweet Chili Sauce or Honey with a sprinkle of hot chilies
- 1 tsp Fish Sauce
- 2 tsp Soy Sauce
- Juice of 1/2 Lime
Instructions
- Toss together the Grains, Greens and your choice of Vegetables
- Mix Dressing Ingredients in a glass jar and shake well
- Gently toss the Dressing into the Greens, Grains and Vegetables
- Top with Cashews, Herbs, Lime Leaves and Jalepenos
- Squeeze a lime over the top
Notes
Trader Joe's Thai Lime Cashews add a flavorful punch of lemongrass and chili. Fried and slivered Lime Leaves add an authentic Thai touch.
