This is a super fast dinner to serve up with an array of side dish Veg. Use store bought Veggie Sausages or Chicken Sausages.
Veggie Sausages with Sweet Potato Mash and Leeks

Super easy cheater weeknight dinner with good quality Veggie or Chicken Sausages.
Ingredients
- 4 large good quality organic potatoes, peeled and chopped big
- 4 Sweet Potatoes, peeled and chopped big
- 1/2 cup Greek Yogurt, Soy Cream, Creme Freche or Sour Cream
- 3 large Leeks, washed and sliced thin on the mandoline
- 6-8 Veggie or Chicken Sausages, grilled, baked or pan fried
Instructions
- Heat a large pot of water and bring to a boil
- Add the White Potatoes and boil 5 minutes, add the Sweet Potatoes and cook until both are soft
- (Alternatively, cook both with a bit of Veggie Broth in the Pressure Cooker about 7 minutes)
- Drain and let sit a few minutes
- Heat a splash of Olive Oil in a large skillet and when hot, sizzle the leeks 5-7 minutes until soft and beginning to brown
- Mash the Potatoes coarsley with the Cream like stuff, season with Sea Salt and Pepper
- Pile the Potatoes on a plate, top with the leeks and Sausages
