When Spring hits the UK and the sunny days grace us, we are so very grateful. This week has been easy to celebrate as Earth Week as the days here have been clear and beautiful with an abundance of earthy things coming to life. I find myself pulled to the outdoors, hiking, gardening and just lingering in the warm, glorious light. This does mean, however my cooking time suffers. This week’s menu is all about spending less time in the kitchen and more time enjoying the Earth. When I run out of menu ideas I think “International”. This means at least one dish from my childhood days in Mexico, one from the European country I love to eat my way through…Italy…. and something Asian because stir fry is my go to veggie fix. As usual, I have to have meaty and veggie options. By using crossover ingredients, preparing food for all the different nutritional needs in my family is easy, fast and healthy.
