The weekly menu June 8-12 is my busy, crazy week dinner plan. On weeks like these I go with my standard m.o. of a big pot of beans and repurpose them later in the week. I try to pick at least one recipe for the busiest day of the week that I can prep for and toss together at the last minute. Pasta Jambalaya is fast, easy and can feed a crowd. Chicken with White Beans and Pesto can be made in the slow cooker, stovetop or oven and the pesto can be made ahead or store bought. The beans go double duty in the Mediterreanean Bean Patties.
